Pumpkin Arroz con Leche

  15 min Total 30 min Ingredients 12 Servings 4 12 Ingredients 3 1/2 cups whole milk 1/4 teaspoon salt 1/4 teaspoon nutmeg, ground 2 cloves 1 cinnamon stick 1 cup Arborio rice 7.5 ozs pumpkin puree 1/3 cup sugar 1/2 teaspoon vanilla extract 1/2 cup packed brown sugar Orange zest for garnish Pepitas for garnish 1 In a heavy saucepan, combine milk, salt, nutmeg, cloves and cinnamon over medium heat. Bring to a slow simmer. 2 Add rice and bring to a boil. Reduce heat and cover. Let simmer, stirring occasionally until rice is tender; approximately 20 minutes. 3 Uncover and fold in pumpkin puree, sugar and vanilla until completely combined. Cook for 5 more minutes. Cover and remove from heat. Discard cinnamon sticks and cloves. Let cool. 4 To serve, garnish with orange zest and pepitas.  

Puerto Rican Coquito Cheesecake

  Prep 15 min Total 1 hr 15 min Ingredients 17 Servings 8 17 Ingredients For the coquito: 12 oz coconut milk 8.5 oz coconut cream 12 oz evaporated milk 1 tablespoon vanilla 2 cinnamon sticks 1 cup white rum (optional) For the cheesecake: 1 1/2 cups Graham crackers, ground 1/3 cup unsalted butter, softened 1 package (8 oz) cream cheese, softened 2 tablespoons Pillsbury BEST® All Purpose Flour 1/2 cup condensed milk 1 cup coquito drink 4 eggs 1 teaspoon vanilla 1 teaspoon ground cinnamon 1/8 teaspoon ground clove 1/2 cup sugar For the coquito: In a blender, process all ingredients. You can make an alcohol-free version without rum. 2 For the cheesecake: Preheat oven to 350°F. 3 Combine ground Graham crackers with softened butter. Pour into a spring-loaded 7-inch mold and press firmly into the bottom to create the crust. Bake for 8-10 minutes. Con un cortador de galletas redondo de 1¾ de diámetro, corta cuatro círculos en cada ronda de hojaldre (48 rondas). Bienvenido! I’d like to introduce you to one of the most delicious restaurants in Luquillo PR. La Parrilla, is I’d have to say one of the best spots to get fresh caught seafood and very friendly service! When you walk into this restaurant you’re greeted very warmly and by large salt water fish tanks filled with the largest lobsters you’ve ever seen. Jajajajaja! They say everything’s bigger in TX, nah they haven’t been to Luquillo! The La Parrilla has the best and the biggest lobsters every seen, service is outstanding and I certainly can see why its rated one of the best in the Rio Grande area. Its a must go to and revisit restaurant for sure. This place was highly recommend to me. It’s located in a strip mall of small kiosks shops. I have nothing but amazing things to say about this place. ‘Twas the night before Christmas and all through the casa not a creature was stirring, not even a Coquí. The children were tucked in their beds fast asleep in hopes Papa Noel soon would be there. Christmas in Puerto Rico starts early on, for some it starts right after Thanksgiving, which is the Advent or the fourth Sunday before Christmas Day.  There are many celebrations that make “Navidad en Puerto Rico” such a special time, the most famous traditions?: The “parrandas”or “asaltos navideños” especially on Christmas Eve and “Los Tres Reyes.” The Epiphany is the main celebration. On January 6 “Los Reyes” or The Three Wise Men arrive to bring offerings to baby Jesus. Christmas day, meaning “Nochebuena” is another celebration but not as important as The Three Kings. Christmas 🎄Spice Rum 🍰Cake

Prep Time: 30 Minutes Difficulty: Easy Cook Time: 1 Hours Servings: 12 Servings Ingredients FOR THE CAKE: 1 box (about 18 Oz.) Yellow Cake Mix 1 package (3.5 Oz.) INSTANT Vanilla Pudding Mix 4 whole Eggs 1/2 cup Cold Water 1/2 cup Canola Oil 1/2 cup Rum (dark Or Light Is Fine)(Bacardi) 1 cup Chopped Pecans Brown Sugar (optional) _____ GLAZE 1-1/2 stick Butter 1/4 cup Water 1-1/2 cup Sugar 3/4 cups Rum (Bacardi) Instructions Preheat oven to 325 F. Grease and flour a bundt cake pan. Sprinkle nuts over bottom of pan. If desired, sprinkle a couple of tablespoons of brown sugar over the nuts. Mix all cake ingredients together. Pour batter into pan over nuts. Smooth out ’til the top is even. Bake for 1 hour, or a little less if the pan is black. Do not overbake! Glaze: While cake has ten minutes to go, make the glaze. Melt butter in saucepan. Stir in water and sugar. Boil for 4 to 5 minutes, stirring constantly. Turn off flame and pour in rum. …

Budín de Pan 🍮

Ingredients: 1 bag of sliced bread 3 eggs 1-12oz can of evaporated milk 1/3 cup of coconut milk 1 cup of granulated sugar 4 tablespoons of butter 2 tablespoons of condensed milk 1 teaspoon of vanilla 1 1/2 teaspoon of cinnamon 1/2 cup of raisins (optional) Directions Tear sliced bread by hand and place in a bowl. Melt 4 tablespoons of butter. Add butter along with all remaining ingredients to the bowl and mix well with a mixer until smooth. This La Lechera Sweetened Condensed Milk is one of my secret ingredients. It helps sweeten it plus helps give the Budín de Pan a smoother texture. used a 9 1/2″ x 7 1/2″ glass pan and sprayed it with non-stick spray. Bake for 350 degrees for 35-40 minutes depending on your oven. To make sure it’s done use the toothpick method and poke the middle. If it comes out clean, it’s done. Once you let it cool, flip the pan upside down to get the Budín de Pan out. This is what it will look like …
